salisbury steak...

Ha!  This time yesterday I actually started this blog post...
I'm just now getting back to it.  But, well, you know how that goes.

Whew!  We had some crazy weather last night (actually
it was two nights ago... I wanted to keep this post original)...
Heavy rain, hail, wind and rotation clouds all over the DFW area.
Everything is lovely and sunny today... but for a few hours
last night I was in a state of panic and freaked out mode.
It's pretty darn scary when the warning sirens are going
off, you lose your satellite connection, and your second-born
homegirl is on the phone with you, telling
you that a tornado has been reported right down the street from
your house, and then she starts crying and asking,
"what are y'all going to do?".

I'll tell you what I did...
I broke out in hives, that's what I did... and then I did this...
I ran to my youngest homegirl's bedroom (because that is where
the largest interior closet is located in mi casa) and began clearing it out.
I hung up with second-born homegirl... told youngest homegirl to
call her back on her phone, so I could call oldest homegirl and check on them.
(Did you get all that?)
They live just four miles from me in the direction the rotation was heading.
She was in freak-out mode too, but they were ok.

Meanwhile, JB was cool as a cucumber, as he stepped out onto the
front porch to keep watch, and got his brother (who lives out in an
Eastern suburb) on the phone to get the latest reports.

All the while I was darting from front door, to back door,
to laptop, to tv, to homegirls room... with a toddler on my hip.
Freak-out mode I tell you. 

And before we knew it, it had blown over and all was still again.

And that's when my youngest homegirl began teasing me about
how I went into "psycho hulk mom mode" while clearing out her closet.
She started putting sound effects to my earlier actions...
and before I knew it, I was cracking up.
God bless the teenagers.

So, unfortunately, I only got this one shot of my
ridiculously yummy salisbury steak.


*Salisbury Steak*

2 pounds ground beef
1/2 cup dry bread crumbs... I used seasoned.
1 large egg, lightly beaten
2 Tablespoons Worcestershire Sauce
2 cloves garlic, minced
1/2 teaspoon ground black pepper
1/4 teaspoon salt... I used a big pinch of Kosher.
1 8oz pkg baby bella mushrooms, sliced
2 Tablespoons all-purpose flour
1 can cream of onion soup... the recipe actually
called for French Onion Soup, but I forgot by the time
I got to the grocery and grabbed the wrong one.  But it works great too!
1 can beef consomme

In
a large bowl, combine ground beef, bread crumbs,
egg, Worcestershire Sauce, garlic, pepper and salt.
Form mixture into about 6 patties.
Heat non-stick skillet over medium heat.
Add patties to skillet, in batches if necessary,
and cook for  7 to 8 minutes per side or until browned.
Remove patties from pan and set aside.
Toss your sliced mushrooms into skillet, and saute
for 1 to 2 minutes or until tender.
Add flour and cream onion soup and cook stirring constantly for 2 minutes.
Stir in consomme.
Return patties to skillet; bring to a boil.  Reduce heat and simmer
uncovered for 30-40 minutes, or until patties are cooked through and
sauce is thickened.
Serve immediately with your favorite mashed potatoes!

drunken beef stew...

Cold?
Snowed in?
Expecting more snow?

We're expecting more snow here in Dallas in about 12 hours.
Right now you'd never guess it, seeing as how it's beautiful clear
blue skies, lots of sunshine and 50 degrees.

Last week we had a super snow storm to go right along
with all the Super Bowl extravaganza.
I didn't leave my house and school was closed for four days...
I'm not sure I'll ever recover.


Well, maybe if I make this.
Yes, this actually might save me.

It's a little labor intensive... just a little.
But oh so worth it.


*Drunken Beef Stew*

3 pounds beef stew meat
1 can/bottle of your favorite dark beer
Salt & Pepper
4 Tablespoons butter
2 cups water
32 oz beef stock
2 Tablespoons butter
Drizzle of olive oil
1 medium onion, chopped
2 Tablespoons Worcestershire sauce
2 bay leaves
1 Tablespoon sugar
1/2 teaspoon paprika
1/3 teaspoon allspice
5 whole carrots, sliced
3 stalks celery, chopped
Salt & Pepper to taste
2 Tablespoons flour
1/3 cup water

~Prep the stew meat by soaking it in beer overnight
or at least several hours.
~Drain the meat saving the liquid... set it aside.
~Pat meat dry.
~In a skillet, sear stew meat in two batches using butter,
oil, salt and pepper.
~After meat is seared, transfer to a dutch oven or big pot.
~Using the saved liquid, add 2 cups of water and pour over meat.
~Pour in the beef stock
~Turn heat on to medium-high.
~Add sugar, paprika and allspice. Stir well.
~Bring to a boil.
~Cover, lower heat to medium-low... more on the low side.
~Simmer for 2 - 3 hours. May need to add a little
more water, beef stock or broth at this point.
~Add carrots and celery, cover and simmer for about another hour.
~Make a roux with flour and water if needed to thicken.
~Salt and pepper to taste.
~Serve over your favorite mashed potatoes... mine are roasted garlic.

smothered hamburger steak...

Brrr, brrr, brrr... brrr, brrr!
Baby it's cold outside.

It's cold everywhere.
Even here in the Lone Star state.
My heater has been running non-stop.

And when it's this cold, all I want to do is eat
stuff like this and bake cookies.

Speaking of... hang on a second. I've got some chocolate
chip oatmeal cookies in the oven I need to check on...

O'm bok. *chomp* *chomp*
Oh, excuse me. I'm sorry for chewing in your ear.
What can I say? They're fresh out of the oven!

Anyway, what was I talking about?

Ahhh, yes. How could I forget about this.
This hot mess of delicious comfort.

You can whip this up in no time...
then return to your warm spot under
your covers with a happy belly.

~Smothered Hamburger Steak~

Prepare
your favorite mashed potatoes.
Prepare and pan fry your favorite hamburgers.
Remove from pan, leaving drippings...
unless there's a lot, then drain most.
Grab a can of cream of mushroom soup and a
package of brown gravy.
Mix together in your pan with 1/4 to 1/2 cup water, until bubbly.

Serve over your hamburger patties immediately.

*Cookie baking optional.

tex-mex beer chili...

*slurp*, *slurrrrrrp*
Oh, hello... please excuse me while I lick my bowl.
I'm sorry.
I just can't help myself.
This stuff ranks up there with finger-lickin' good.

By the way, Happy New Year!


Here, I served it over homemade tamales.
My good friend, Amy, hand made tamales
over the New Year holiday and brought me some.
My, oh my were they yummy... she came later and
we made them together at my casa. More on that later.

Today I want to share this chili.
I want you to make this chili.
And I want you to slurp your bowl.

So, I'll stop talking now and tell you how to make it.
It's super easy...

~Tex-Mex Beer Chili~

2 lbs ground beef
1 can black beans, drained
1 can diced tomatoes
1 (8 oz) can tomato sauce
1/2 cup water
1 can Shiner Bock beer
... or your favorite
2 Tablespoons chili powder
1 tsp oregano
1/4 tsp cayenne pepper, or more
1 tsp salt, to taste
1 small onion, chopped and sauteed
in butter until golden and soft
2 cloves of garlic, chopped and sauteed
with the onion.


~Cook ground beef in skillet... while cooking use a potato masher
to break apart the beef for a finer texture. Drain.
~Mix beef in a large pot with the black beans, tomatoes,
tomato sauce, water, and beer.
~Cook on med-high heat for about 5 minutes, stirring a couple of times.
~Add the chili powder, oregano, cayenne pepper (remember, you can more
if you like it fire breathing hot) and salt. Stir.
~Bring to a simmer and cook about 10 minutes.
~Add the sauteed onion and garlic.
~Simmer for about 20 minutes.

Serve it with crackers or cornbread.
Serve it over hot dogs or tamales.
I don't care how you serve it...
I just want you to make it and eat it!

Now, if you'll excuse me, I've got a bowl to finish slurping.

meatball sliders...

I made these the other night and they were, aside from being
super simple, simply scrumptious.


The Pioneer Woman posted about them last week.
She made her meatballs from scratch.


Since I'm trying to avoid standing over a hot stove more than I
have to this summer, I opted to buy a bag of pre-made frozen meatballs.


And it worked just fine.

Maybe PW should have done the same... 'cause it actually
ended up being about a "16-Minute Meal" with
the frozen meatballs.

Try 'em this weekend for quick and filling lunch or dinner.
Your family will love you for it!

sweet lemon tea with basil...

Ahhhh... there's nothing like kickin' back in
the hammock with a cold refreshing treat in hand.

I simply adore sweet basil.
The flavor of it, the scent... Oh, the scent. *faint*
In fact, I'm growing some right now and I love to sniff it.
Yes, I'm weird.

This refreshing treat has a hint of fresh basil and makes it oh, so special. Yum.

Let's make it...

You're gonna need water, sugar, a family size
tea bag, lemon juice, and fresh basil.


Start by heating 2 cups of water and 1/2 cup sugar
(if you like it extra sweet, use 1 cup sugar)
to just boiling... Just until the sugar dissolves.
Remove from heat.


Add the tea bag...


and let it steep for about 10 minutes.


While you wait for the tea to steep,
gather up some fresh basil (about 3 leaves will do)...


and 1 cup lemon juice.


Put the lemon juice and fresh basil leaves in your blender...


and blend it for about 30 seconds.


Oh, it smells so delightful. *insert smiley face*


After the tea and sugar mixture has cooled
a bit, pour it in a pitcher.


Add the blended lemon and basil.


Spoon off the foam.


Serve over ice.

Now, go put your feet up and enjoy.

It'll help wash

this down.

tradition to kick start the day.



Late night fireworks with my homies under the full moon... Perfect.

texas style grilled cheese...

Hey Friends!
Did y'all enjoy that
Pepper Brisket the other day?
I know I did.
I realize you might not have any leftovers around... BUT, just in
case you do, you're gonna want to make this...

Oh Baby!
A "real" Texas Style Grilled Cheese Sandwich!
Now we're talkin'.

I've even been known to make the brisket just for this sandwich.
You can make it with Texas Toast, Hoagies, Buns... whatever
your favorite sandwich bread is, just as long as it's not puny.
Puny bread won't stand a chance.

Ok, so, go grab your leftover meat from your fridge
and lets make this thing...

Heat your meat up in a skillet.
You could even add more barbecue sauce if you want.


Saute up some sliced onions.
Heaven help me.


Have your Texas Toast ready... or whatever your favorite
sandwich bread might be.


Your favorite sliced cheese... I chose this. ;)


And, a little mustard sauce.
Oh. So. Good.

Ok... I'm sure you know this drill.


Place the bread, butter side down, in your hot pan
and lay on a slice of cheese.
Please excuse my pan... it's old. You know, the kind of pan
that your grandmother has. It's well seasoned and
she uses it for everything from sauteing onions, to making
scrambled eggs to making grilled cheese. It's a great little pan...
it's one of my favorites.


Now, pile on the meat... Pile it on good.


Remember those onions you sauteed?
Add them on now... yum.


Squirt a little, or a lot, of the mustard sauce on.


Top with another slice of cheese.


Add the second piece of bread and cook.
Will you look at that. See how the cheese is already melting?
*Drool*


Don't get too caught up in your drooling and forget to flip it over.

I'm gonna finish this last bite and faint all over again.
